Grain Bill:

2 gallon

2 lb (60.4%) Maris Otter
3 oz (5.7%) Biscuit
3 oz (5.7%) chocolate malt

5 oz (9.4%) Clove Honey
5 oz (9.4%) Flaked Oats

7 grams Willamette (60 min boil)
5 grams Cascade (60 min boil)
1 cinnamon stick (flame out)

0.25 tsp Irish Moss (15 min boil)

Windsor yeast

Steps:

Strike water to 160 degrees
Mash 1 gallon @140 degrees for 120 mins
Sparge 3.25 gallons at 170 degrees
Collect 3.1 gallons

Preboil Gravity: 1.028

Efficiency: 71%

OG: 1.038

FG: 1.004

ABV: 4.5%

Primary:

Secondary: 11/18/13

Bottled: 11/21/13

Notes:
Solid cinnamon taste during racking.  Not too dark and rich taste.  Need to add honey malt next time.
