Recipe kit from Northern Brewer

OG: 1.050

FG: 1.010

ABV: 5.3%

Primary: fermenting at a constant 68 degrees with hard fermentation for the first 24-36 hours.

Secondary: 3/15/13

Bottled: 3/29/13

Notes:
Killed the Windsor yeast (too much heat) that originally came with the kit so I used the Nottingham yeast that came with the honey porter ale.

Sampled the brew when racking on 3/15/13, did not taste contaminated but had a slight rum/alcohol taste.  This is probably due to changing the airlock during primary fermentation so many times and using rum in the airlock.  Will not use alcohol as much and try to stay with clean water.

Sampled on 3/18/13 and the bitter/off taste has really started to settle down and starting to taste more clean.

Trail and error with bottling procedure and use of the bottling wand.  Do not let the tip push against anything, major beer loss in the sanitized water.  Put carbonation pellets in bottle first, before beer.

Got six bottles, was hoping for eight.  Beer came out incredibly clear and tasted fine.

Tasted on 4/09/13.  Got anxious and popped one open.  Tasted really good and smooth despite very low carbonation.
